4 items to meal prep for a week’s worth of eating!

“Meal prepping” can be a daunting term to many - spending hours on a Sunday chopping and cooking does not sound like time well spent. I’m here to tell you that meal prepping can be super easy! And once you have just a few things to pull from in your fridge, you can make tons of different meals with them. Below are some of my go-tos and how I use them together:

  • Sliced cucumbers

  • Sliced and roasted sweet potatoes - cut sweet potatoes into thin, round slices. Place on baking sheet, with drizzled olive oil, salt, pepper, and garlic powder. Cook at 425 for 20 mins.

  • Shredded chicken - in your crockpot place organic skinless, boneless chicken breast and season with salt, pepper, garlic powder, and any other seasoning you like. Cover with low sodium chicken broth and cook on high for 4 hours or low for 6-7 hours. Once cooked, shred with two forks

  • Sauteed mushrooms

With these four things, which take max an hour to prep, you can make tons of different dishes that only take 10 minutes to make.

I love making salads with cucumbers, chicken, sweet potatoes, feta cheese, avocado, and a light oil/vinegar dressing. For dinner, I’ll make a bowl with mushrooms, sweet potatoes, brown rice, sauteed spinach, goat cheese, and Trader Joes’ Ginger Miso dressing.

Super simple and makes it way easier to easily throw meals together so you don’t have to rely on eating out or feel like you’re going to have to spend an hour making your lunch. Get prepping!!
